Jackfruit "Tuna"-Style Mayo

I've lately been looking for a nice, fresh and satisfying sandwich filler!

Jackfruit "Tuna"-Style Mayo


For a 200g bowl (2-3 portions), you'll need:
- 150g Jackfruit "Tuna" (I make mine with Jack and Chill!)
- 220ml vegetable (sunflower & rapeseed work best!) oil
- 120ml soy milk at room temperature
- 2 Teaspoons Apple Cider Vinegar
- 1 Teaspoon Lemon Juice
- 1/4 Teaspoon Black Salt (Kala Namak)

Combine all the ingredients in a blender and pulse until the mayonnaise emulsifies.
Once most of the vegan mayo has emulsified, move the blender up and down to incorporate any oil that is sitting on the top.
Add more salt, spices and / or herbs to taste.
Mix with the Jackfruit "Tuna" & enjoy as a Sandwich filler!
