I've been craving some nice fish-style Tacos for a few weeks now -
and finally went on to create some ...

Jackfruit "Fish"-Style Soft Tacos


For 4 Taco / Wraps, you'll need:
- 200g Jackfruit "Tuna" (I make mine with Jack and Chill!)
- 1 Tin Chopped Tomatoes
- 4 Closed-up Mushrooms, chopped
- 1 Medium Carrot, chopped
- Pack of Mexican Seasoning of your Choice (such as Old El Paso Smokey BBQ Fajita Seasoning Mix)
- 4 Tortilla Wraps
- 20g Fresh Spinach Leaves
- 1 Medium Avocado, sliced
- 1/2 Teaspoon of Vegetable Oil

In a deep pan, heat up the oil & fry the Jackfruit "Tuna" for 2-3 minutes.
Add the chopped Mushrooms & Carrot and fry for another minute.
Mix in the pack of Mexican Seasoning and add the tin of Chopped Tomatoes.
Let bubble for a couple of minutes until the sauce becomes thick.
Heat up the Tortilla Wraps in the microwave or oven for a couple of minutes
before assembling the Taco by adding Spinach leaves and the Jackfruit mix.
Top with sliced Avocado, roll up & enjoy!
Tip: Add a spoon of Vegan Mayo before wrapping up the Taco!
