Jack & Chill Foods kindly provided me with a bunch of items to trial!

So this weekend, I went ahead and did something really (really!) special with their Jackfruit Burgers:
"Baked - in - the - Bun" Jackfruit Burgers
The idea for this recipe came from the amazing Steve France who is
by far one of my biggest FB inspirations in Vegan Cooking!
For 2 burgers, you'll need:
- 1/4 cup of warm (not hot!) Water
- 1 pack (1 teaspoon) of dry Yeast
- 1 teaspoon Maple Syrup
- 2 cups Plain Flour
- 2 tablespoons Olive Oil
- 1/2 cup Water
- 1 teaspoon Salt
- 6 cups of Water
- 2 tablespoons of Bicarbonate of Soda
- 1 pack frozen Jack & Chill Jackfruit Burgers
- 2 teaspoons BBQ sauce
- 2 slices of vegan cheese (such as Violife)
- 1 teaspoon of sesame seeds
Take the Jackfruit patties out of the freezer & set aside on a plate to defrost.
Mix the 1/4 cup warm water with the dry yeast & maple syrup. Stir thouroughly until the mix foams & set aside for 5 min.
In a big bowl, add flour, oil, 1/2 cup water, salt & yeast mix and knead for 8-10 min. until a smooth dough comes together.
Cover the bowl & leave on a warm place to rise for 40 min.
Pre-heat oven to 200 Degree Celcius & add non-stick parchment paper on a tray. Sprinkle some flour on your kitchen surface & knead the dough for about 1 min. before you half it. Roll out dough - similar to a pizza - until it's about 2cm in thickness.
Place one of the slightly defrosted Jackfruit burgers on the middle-top, add a slice of vegan cheese on top as well as a spoon of BBQ sauce. Now fold the corners over the patty and press down well to seal the bun. With a sharp knive, poke some holes into the top of the bun to ensure airflow during baking. Repeat process with second dough / pattie.
In a pot, bring 6 cups of water & 2 tablespoons of baking soda to a boil. Lower the buns into the water & boil for 30 seconds before removing them & placing them onto the prepared tray. Sprinkle sesame seeds on top & bake for 15 to 20 min.
They're best served with fries and a big salad (or coleslaw!) on the side!
