This week has been a super busy one - but one thing I'm never too busy for is
Cakes, Sweets & our super indulgent Chocolate & Peanut Brownies!
They're exactly what I need after a long, hard week of working! But no Cake and Brownie is really complete until you smother them in a scrummy topping - and this is where this week's mini-recipe will make all the difference to your future sweet indulgences:
Pea-nutty Biscuit Frosting
Combine 2 Tablespoons of Soft Vegan Margerine (such as Vitalite) with
3 Tablespoons of Icing Sugar and
1-2 Tablespoons of crunchy "Biscuit Spread"
- such as from Biscoff or Supermarket own brand ones.
Throw in a couple hands full of salted Peanuts & mix carefully with a spoon.
Take care to not overwork the mix & do this as fast as you can - as otherwise the mix might split...
Spread across your cakes and brownies - or simply splash it on some toast (cheeky but oh-so-good)!
