Now a couple of weeks into 2019 I have finally used up all the "not-so-healthy" foods in baking
bits such as my indulgent Chocolate-Peanut Brownies - and sharing them across family, friends & colleagues ...
With ridding myself from these, I'm now ready again to embrace wholesome meals that nourish the body
- and help me detox from the previous salt & sugar overload! And that's where the following recipe comes to play, my:
Nourishing Lentil Spag- Bol
Made with some extra special base-ingredients such as chili and ginger, this Spag- Bol is not only delicious,
but also gives your immune system that little extra support, to ensure your body keeps happy & healthy.
For 2 generous Portions, you'll need:
150g Spaghetti (chose Whole Wheat for extra TLC)
1 tin of chopped Tomatos
100g green Lentils (dried: soak overnight & drain, but feel free to use tinned!)
1 teaspoon of Vegetable Oil
50ml red wine (optional!)
4-5 medium sized button Mushrooms, roughly chopped
50g green Beans, roughly chopped
1 medium size Onion, finely diced
2 cloves of Garlic, finely diced
1/2 red Chili, finely diced (de-seed if you prefer it less spicy)
20g fresh Ginger, finely diced
2 teaspoons dried herbs (use an Italian ready mix or Oregano, Thyme, Basil all work well / whatever you prefer!)
1 teaspoon smoked Paprika
Bring a big pot with water to boil & cook Spaghetti as per instructions on the packaging.
While the Spaghetti cook, heat up the oil in a pan and add the diced onions, chili and ginger.
Fry for 2 min. before adding the garlic and mushrooms. After about 1 min. also add the green beans
and lentils. Give roughly another minute before you add the red wine & let it simmer down for 2-3 minutes.
Finally add the tin of chopped tomatos, dried herbs & smoked paprika,
turn the heat down to medium and let simmer for another 5 min.
Drain the Spaghetti and add them back into the empty pot before adding the lentil sauce & mixing it all thouroughly.
Serve with some vegan cheese (I love grating some Sainsbury's Free From Greek-Style Coconut over ours!)
