First & foremost, I'd like to wish all of you lovely people a
Happy New Year 2019 !!!
And what better way to start the new year by using up all these left-over sweeties with these
Chocolate and Peanut Brownies
They're easy & fast to whip up (ideal also for some Sunday afternoon baking with the kids!)
and are indulgently delicious while still warm, as well as once cooled - especially with the below mentioned PB frosting!
For a medium-sized tray of brownies, you'll need:
200g sugar (any of your choice)
250g flour
50g coca powder (unsweetened)
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
1 pinch salt
Mix in a bowl & set aside, while you melt following items over a water-bath (pot filled with water):
200g dark chocolate
125ml vegetable oil
150ml plant milk
Once it’s all melted, pour the liquid into the bowl with the dry ingredients and add
2 big hands full of salted peanuts - before mixing it into a sticky dough.
Add mix onto a tray lined with (reusable) baking paper & bake at 175 degree Celsius for 20 - 25 min.
If you fancy, you can also add some extra peanut-butter frosting on top by whisking
3 tablespoons of vegan margarine with
1 tablespoon icing sugar &
4 tablespoons crunchy peanut butter!
