Vegan Smoked Carrot Salmon

It’s been a little while since I posted an actual recipe but trust that I’m back with a true BANGER :

Vegan Smoked Carrot Salmon

This is actually one my mum developed and I pinched – but it’s too good to not share with you all! :)

To be honest, those are the closest that come to German Salmon Rolls I’ve ever tasted. It’s smoky, it’s soft and just lush!

To make a bowl full the Carrot Salmon, you'll need:
- 7 large Carrots
- 1 pack of Nori Sheets
- 750ml water
- 1 Tablespoon Liquid Smoke
- Vegetable Oil
- 2 Tablespoons Salt

Peel the carrots & - again with a peeler – cut them into wide stripes.
Only use the outside and not the core (the core is too sweet – use for some other dish!)

In a pot, heat up 750ml water with 2 Tablespoons of Salt and 1 Tablespoon of Liquid Smoke.
Add the Nori Sheets and boil for approx. 3 minutes.

Remove the Nori Sheets and add some to a tea strainer – and add that back into pot with the liquid.
Add the Carrot strips into the pot and cook for 3-4 minutes. Keep checking so they don’t get too soft!

Strain the Carrots, but make sure you catch the cooking liquid in a bowl.
Browse the Carrots quickly with some cold water to stop the cooking process.

Add 300ml of the cooking liquid to a large container with lid. Add 3 Tablespoons of Vegetable Oil, ½ Teaspoon of Liquid Smoke and taste.
Don’t worry if it’s a bit too salty – the carrots will take that in during the marinating phase!
Add the carrots to the container and leave in the fridge for 4 to 5 hours before straining & serving!

Top Tip: Serve with some onion for a proper German Salmon Roll experience :)
Enjoy & as usual, make sure you tag me in your re-creations!!!
