Vegan Jambalaya

Cajun Cuisine is one of my most favourite ones. It's a mix of so many wonderful cultural influences.
Spicy, sexy and with a touch of suave, a good Cajun meal will make your tongue dance!

And yes, Cajun food can be (quite easily) veganised! Without the cruelty & some on-point meat replacements,
this recipe makes for a deliciously warming bowl of comfortness - especially on a chilly, rainy day!
So here it is … my version of:

Vegan Jambalaya



For 4 portions, you'll need:
- 1 medium Onion, chopped
- 2 cloves of Garlic, chopped
- 1/2 red Chili, chopped (optional - leave out if you fancy less spice!)
- 1 orange Pepper, diced (or any other colour you got to hand!)
- 1 teaspoon Coconut Oil
- 1/2 cup warm Water
- 1 vegan Stock cube
- 1 cup brown Rice
- 200g vegan Chicken-Style stripes (we love & use Fry's Vegan Chicken-Style Strips)
- 200g vegan Chorizo sausage (we love & use Iceland No Porkies)
- 1 tin of chopped Tomatoes
- 1 tablespoon dark brown Sugar
- 1 tablespoon Liquid Smoke
- 1 tablespoon Cajun spice mix (we love & use Schwartz Cajun Herb & Spice Blend Seasoning)
- hand full of chopped Parsley for serving

Fry the onion, garlic and chili with the coconut oil in a large pan for 2 min.
Add the rice, chicken-style strips & vegan chorizo and fry for another minute or so.
Add the warm water & the stock cube and simmer until the stock cube is dissolved.
Add the Cajun spice & stir thoroughly before adding the chopped tomatoes.
Add the diced peppers, as well as the brown sugar & liquid smoke - and let simmer for 20 - 30 min. until the rice is cooked.
Serve with some chopped parsley on top!
