No 1 Vegan Flu & Cold Remedy: Creamy Hot & Sour Soup

Welcome to autumn - the time of the year for bonfires, toffee apples,
falling leaves and of course, Halloween! A wonderful spooky & cosy time.
Well, as long as you don't catch one of these nasty cold / flu bugs that 
ALWAYS seem to be around as soon as summer says goodbye to us!

But have no fear, a remedy is near! Should you start to feel a little 

under the weather with a blocked or runny nose, an itchy & sore throat 
or even a little feverish, we got the right meal to get you back up on your feet 
– and healthily through the “germ-packed” seasons!


My Asian style Creamy Hot & Sour Soup is 100% vegan and can – as with all our other recipes 
– be easily amended by removing or adding any ingredient of your fancy.

Following is the base recipe for 2 (generous) servings:
1 Tablespoon Coconut Oil
-> anti-inflammatory, anti-microbial & anti-bacterial properties as well as immune boosting!
2 medium red Onions, chopped
-> removes toxins from the body & helps to rid of congestion, mucous & cough
2 Garlic cloves, chopped
-> anti-bacterial, anti-biotical & anti-viral properties
½ red Chili, chopped
-> capsaicin helps to relief of stuffy head & clears blocked nose and congestion
1 big piece of fresh Ginger, chopped
-> anti-flammatory, anti-viral, anti-bacterial, clears congestion
1 stalk Lemongrass
-> anti-bacterial, anti-fungal and fever reducing
 Juice of 2 fresh Lemons & 2 fresh Limes
-> full of vitamin C, anti-bacterial, reduces phlegm
1 can of Coconut Milk
-> fat source to support intake of fat-suable vitamins
1 vegan Stock cube
-> full of vital minerals to boost the immune system
1 Tablespoon of vegan Soy sauce
-> source of antioxidants & niacin (improves & restores immunity)
1 chopped Bok Choy (or any other greens of your choice!)
-> nutritional “Power-House” with vitamin A, C & K, magnesium, potassium, iron …
300g Udon noodles (such as Amoy Udon Thick Noodles)
-> mild & easy to digest carbohydrates to give you energy
 Hand-full of chopped Coriander
-> anti-flammatory, anti-septic and a source of niacin

In a medium sized pot, melt the coconut oil & fry the chopped onions, garlic, ginger & chili for 2-3 minutes until the onions get translucent. With the back of a knife, carefully bash along the length of the lemongrass stalk & cut in half before adding it to the onions. Add the lemon & lime juice and let simmer for a minute before adding the coconut milk, soy sauce & stock cube. Let simmer for another minute. Add the chopped Bok Choy and Udon noodles & continue to cook for 2-3 minutes until the noodles are cooked.
Serve with some chopped Coriander on top.


This easy & fast recipe can be done in 15 min. and should be eaten as hot as possible. 
If you feel the consistency is too thick, don’t hesitate to add some hot water and make it to the consistency of your choice.

Further fun & health-boosting additions to the soup can be: Mushrooms, a spoon of Miso-Paste, Chicken-Style Seitan 
(or any other meat-replacer), chopped carrots or peppers, turmeric, kaffir lime leaves, courgette ... 
or for a special “winter-warmer feeling” add some Chinese 5-Spice seasoning!


And if you don’t have the time or energy to cook up the above, make sure you stock up on some vegan ready hot & spicy noodle cups 
– such as Ko-Lee Hot & Spicy Noodles (3 for £1 at Poundland!). They won’t be as healthy, but will help induce sweating 
and relief your congestion to push all these germs out!
